Maybe, but not necessarily.
You'd get a cardiod coverage per antenna, but all is dependant on the
radiating structure (antenna construction) and the distance from the "bit"
of metal (reflective surface).
Depends on the shape of the metal structure between the antennas (and the
creation of radiating "images" (imagine looking into 2 mirrors that are at
90 degrees to each other).
Eg, if you had a crosshatch ( + ) and placed an antenna in the opposite
sectors, it'd be like two back to back corner reflectors.
In terms of noise, you might get a bit of noise, but the front to back
ratio of a corner reflector would be at least 30dB.... maybe 40. The front
to back ratio of a simple pole between two omnis might be as low as 5 -
10dB.
If your radios are good (clean & tight output) & power output is low (<5 -
10W), then noise should't be a big problem.

if i shoved 2 omni's next 2 eachother with a peace of metal between the 2,
would that make 2 180deg omnis?
would they create much noise with that config?
